Did you know that you can mix a perfect sour with Aperol? One of our favorite drinks for years. With Laori Ruby No 4 you can mix this delicious temptation easy peasy without alcohol.
Here’s the recipe for non-alcoholic Aperol Sour:
- 6 cl Laori Ruby No 4
- 3 cl lemon juice
- 2 cl sugar syrup
- Optionally for the perfect foam crown: 1 egg white
Put all ingredients in a shaker with ice and shake the drink vigorously. Serve over ice and enjoy quickly.
How to make the perfect foam
You can get the perfect head of foam with an egg white. Do you prefer a vegan version or don't like fresh ice in your drink? You can leave out the egg white, replace it with aquafaba (chickpea water) or buy an egg white substitute for your bar. Then add all the ingredients to a shaker and shake without ice - a so-called dry shake. Then shake the whole thing again with ice until you have a really nice head of foam. Strain the whole thing through a bar strainer.
